In many rural villages harvested broad bean plants are laid on concrete pads and roads to dry, and pedestrians, cyclists, and the few cars that are around, are encouraged to move back and forth over the beans to help shell them. Over the subsequent days the stalks and shells are removed by raking and distributing the beans over the hard surfaces to continue drying prior to collection and further processing.
